Baker spotlight: Kabocha!

Kabocha is a variety of Japanese squash that is quite like a western pumpkin (literally means โ€œpumpkinโ€ in Japanese). It is typically green on the outside and light orange inside. At Slipstream, we are using Red Kabochas for our Kabocha Latte and squash butter which is a deeper orande inside and out. Why use kabocha? Well, kabochas are much sweeter than your average pumpkin, even sweeter than butternut, and has a smooth, velvety texture. This means we can avoid adding lots of sugar and still get deliciousness!
