Baker spotlight: Kabocha!

Kabocha is a variety of Japanese squash that is quite like a western pumpkin (literally means “pumpkin” in Japanese). It is typically green on the outside and light orange inside. At Slipstream, we are using Red Kabochas for our Kabocha Latte and squash butter which is a deeper orande inside and out. Why use kabocha? Well, kabochas are much sweeter than your average pumpkin, even sweeter than butternut, and has a smooth, velvety texture. This means we can avoid adding lots of sugar and still get deliciousness!
